  • 18 to 20 jumbo pasta shells
  • 5 ounces fresh spinach
  • 2 cups ricotta cheese
  • 1/4 cup grated pecorino cheese
  • 2 grated garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes
  • 3/4 teaspoon sea salt
  • Freshly ground black pepper
  • 2 cups marinara sauce
  • Chopped fresh parsley for garnish
  • Extra-virgin olive oil for drizzling

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. In a bowl, mix ricotta cheese, spinach, pecorino, garlic, oregano, lemon zest, red pepper flakes, salt, and pepper until well combined.
  3. Preheat oven to 375°F (190°C). Fill each shell with the ricotta mixture and place seam-side up in a baking dish.
  4. Pour marinara sauce over the shells and sprinkle with extra pecorino cheese.
  5. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until golden.
  6. Garnish with fresh parsley before serving.
