  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz mozzarella pearls
  • ¼ cup red onion, sliced thin
  • ⅓ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and allow to cool completely.
  2. In a small bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper to create the vinaigrette.
  3. Chop the turkey slices and turkey pepperoni into bite-sized pieces. Halve the cherry tomatoes and slice olives and red onion thinly.
  4. In a large bowl, combine cooled pasta with all prepared ingredients. Pour vinaigrette over the top and toss gently until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
