  • 5 egg whites
  • ¼ teaspoon cream of tartar
  • 1¼ cups fine sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons white vinegar
  • 2 tablespoons cornflour
  • 600ml thickened cream
  • Sliced strawberries
  • Passionfruit pulp
  • Icing sugar

Instructions

  1. Preheat oven to 120°C (250°F) and line a baking tray with parchment paper.
  2. In a clean bowl, whip egg whites until frothy. Add cream of tartar and continue whipping until soft peaks form.
  3. Gradually add fine sugar, one tablespoon at a time, whipping until stiff peaks form.
  4. Gently fold in vanilla extract, white vinegar, and cornflour.
  5. Shape meringue into a tree outline on the baking tray using a spatula.
  6. Bake for about 1 hour and 15 minutes until dry to the touch. Leave in the oven to cool gradually.
  7. Whip thickened cream until soft peaks form.
  8. Once cooled, transfer meringue to a serving platter, spread whipped cream on top, and decorate with sliced strawberries and passionfruit pulp. Dust with icing sugar.
