  • 2 cups sharp cheddar cheese (shredded)
  • 1 ½ cups sour cream
  • ¼ cup unsalted butter
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup chicken broth (room temperature)
  • ½ cup whole milk (room temperature)
  • 4 large yellow onions (thinly sliced for frying)
  • 4 cups vegetable oil

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. In a skillet over medium heat, melt butter, then sauté diced onion and minced garlic until soft.
  4. In a bowl, mix thawed hash browns, sautéed onions, cheddar cheese, sour cream, flour, salt, black pepper, cayenne pepper, dried mustard, chicken broth, and milk until well combined.
  5. Pour mixture into the prepared baking dish and bake uncovered for about 50 minutes until bubbly and golden brown.
  6. While baking, heat vegetable oil in a pot over medium-high heat and fry sliced onions until crispy. Drain on paper towels.
  7. Once the casserole is baked, top with crispy fried onions and return to the oven for an additional 5 minutes.
