  • 1 lb ground beef (or ½ beef + ½ turkey)
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 12 oz linguine
  • ¾ cup heavy cream
  • 4 tbsp unsalted butter
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley

Instructions

  1. In a bowl, mix ground beef, egg, breadcrumbs, Parmesan cheese, minced garlic, salt, and pepper until combined. Form into meatballs about an inch in diameter.
  2. Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides (6–8 minutes). Remove from skillet.
  3. In the same skillet, reduce heat to low and add butter and minced garlic. Sauté until fragrant (1–2 minutes), then stir in lemon juice and parsley before returning meatballs to the skillet. Simmer for 5–7 minutes.
  4. Cook linguine according to package directions until al dente. In a separate saucepan, melt butter, add heavy cream and Parmesan cheese, stirring until smooth. Adjust consistency with reserved pasta water if needed.
  5. Serve meatballs over creamy linguine with additional sauce drizzled on top.
