  • 1 large bulb of garlic
  • 1.3 kg baking potatoes
  • 75 g butter (2 tbsp melted, remainder at room temperature)
  • 2 tbsp heavy cream
  • 60 g freshly grated parmesan cheese (plus more for serving)
  • 4 large egg yolks
  • Fresh parsley (for garnish)
  • Olive oil, salt, and pepper (to taste)

Instructions

  1. Preheat the oven to 180C/356F. Roast the garlic by drizzling olive oil over the bulb, wrapping it in foil, and baking for about 50-60 minutes until soft.
  2. Peel and dice the baking potatoes; cook in salted water until fork-tender. Drain and let sit for 5 minutes.
  3. In a pot, combine drained potatoes with melted butter and heavy cream. Mash in roasted garlic and parmesan cheese until smooth; season with salt and pepper. Allow to cool slightly before mixing in egg yolks.
  4. Pipe potato mixture onto a parchment-lined baking tray in dome shapes and drizzle with melted butter.
  5. Bake at 200C/400F for 15-20 minutes until golden brown.
