  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp/30g melted)
  • 2 tbsp heavy cream
  • 60g / 3/4 cup freshly grated parmesan cheese
  • 4 large egg yolks
  • Salt and pepper to taste

Instructions

  1. Roast the garlic by slicing off the tip, drizzling with olive oil, wrapping in foil, and baking at 180°C/356°F for about 50-60 minutes until soft.
  2. Peel and dice potatoes; boil in salted water until fork-tender. Drain and let steam dry.
  3. Mash the steamed potatoes with softened butter, cream, roasted garlic, parmesan, salt, and pepper until smooth. Mix in egg yolks one at a time.
  4. Pipe the mixture onto a parchment-lined baking sheet into swirls about 2.5-3 inches wide.
  5. Drizzle with melted butter and bake at 200°C/400°F for 15-20 minutes until golden brown.
