  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75 g) butter
  • 2 tbsp heavy cream
  • 60 g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt, and pepper

Instructions

  1. Preheat the oven to 180C (356F). Roast the garlic by slicing off the top of the bulb, drizzling with olive oil, wrapping in foil, and baking for 50-60 minutes until caramelized.
  2. While garlic roasts, peel and chop potatoes into chunks. Boil in salted water until fork-tender (15-20 minutes). Drain and mash with butter and cream until smooth.
  3. Stir in roasted garlic and Parmesan; season with salt and pepper. Add egg yolks one at a time.
  4. Pipe potato mixture onto a lined baking tray in swirly shapes about 2.5-3 inches high.
  5. Drizzle with melted butter and bake at 200C (400F) for 15-20 minutes until golden brown.
