  • 34 cups vegetable broth
  • Black pepper to taste

Instructions

  1. Sauté chopped onions in olive oil with sea salt and black pepper over medium heat for 5–8 minutes until soft.
  2. Add cubed butternut squash and cook for 8–10 minutes until lightly browned.
  3. Stir in garlic, sage, rosemary, and ginger; cook for an additional 30–60 seconds until fragrant.
  4. Pour in 3 cups of vegetable broth; bring to a boil, then reduce heat and simmer covered for about 25 minutes until squash is tender.
  5. Allow to cool slightly before blending until smooth; adjust seasoning if needed.
  6. Serve hot topped with fresh parsley and toasted pepitas alongside crusty bread.
