  • 240ml low-sodium chicken broth
  • 5g salt (plus extra to taste)
  • 42g unsalted butter (cubed)
  • 5g fresh thyme (chopped)
  • Black pepper (to taste)

Instructions

  1. Bring chicken broth and salt to a boil in a wide pot.
  2. Add cauliflower florets, cover, and steam on low heat for about 20 minutes until fork-tender.
  3. Transfer cooked cauliflower to a food processor using a slotted spoon.
  4. In the previous pot, whisk together three tablespoons of hot broth with cubed butter until smooth.
  5. Pour the butter mixture into the food processor with chopped thyme and season with black pepper and salt.
  6. Blend until completely smooth, adding warm broth gradually if needed for desired consistency.
