  • 1 free-range turkey (about 5 kg)
  • 2 onions (peeled, halved)
  • 1 lemon (halved)
  • 1 head of garlic (halved horizontally)
  • 6 bay leaves
  • Olive oil (for drizzling)
  • Sea salt and freshly ground black pepper
  • 375 g butter
  • 3 cloves garlic (peeled, crushed)
  • Juice and zest of 2 small lemons
  • Chopped flat-leaf parsley
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 220°C.
  2. Make the herb butter by mixing butter with salt, pepper, olive oil, lemon juice, zest, parsley, and crushed garlic in a bowl.
  3. Season the inside of the turkey with salt and pepper; stuff it with onion halves, lemon pieces, garlic halves, and bay leaves.
  4. Loosen the skin gently and spread herb butter under it; tuck in additional bay leaves.
  5. Rub remaining herb butter over the turkey skin and season well.
  6. Roast at 180°C for approximately 2½ hours, basting every half hour.
  7. Let the turkey rest for about 45 minutes before carving.
