  • 2.5 lbs yellow or Yukon gold potatoes
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and cut the potatoes into thick wedges or cubes.
  3. In a roasting pan, combine the potatoes with chicken broth, olive oil, lemon juice, garlic, oregano, paprika, and salt. Toss well.
  4. Cover the pan with foil and roast for about 40 minutes.

  6. Uncover again and roast for an additional 15 minutes until golden brown.
