  • 2.5 lbs yellow potatoes (Yukon gold)
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and cut potatoes into thick wedges or cubes.
  3. In a roasting pan, toss the potatoes with chicken broth, olive oil, lemon juice, garlic, oregano, paprika, and salt until well coated.
  4. Cover the pan with foil and roast for 40 minutes.
  5. Uncover and toss the potatoes, then cover again and roast for an additional 25 minutes.
  6. Finally, remove the foil and roast uncovered for another 15 minutes until golden brown.
  7. Serve warm with any remaining liquid drizzled over.
