  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add olive oil and sauté the diced onion until softened (about 3-4 minutes). Add ground turkey, breaking it apart while cooking until browned (approximately 5-6 minutes). Drain any excess fat if necessary.
  3. Stir in minced garlic, diced bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook together for another 3-5 minutes.
  4. Transfer the mixture to the prepared baking dish. Cover with foil and bake for 25 minutes or until sweet potatoes are tender.
  5. Remove foil and sprinkle cheese evenly over the top. Return to oven for an additional 10-15 minutes until cheese is melted and bubbly.
  6. Serve hot, garnished with fresh parsley or cilantro if desired.
