  • 2 medium sweet potatoes (peeled and diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or frozen, thawed)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté for 2-3 minutes until fragrant.
  3. Add ground turkey; cook for 5-7 minutes until browned. Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Stir in diced red bell pepper and spinach; cook until spinach wilts (2-3 minutes).
  5. Boil diced sweet potatoes until tender (about 10 minutes), then drain.
  6. In a baking dish, layer cooked sweet potatoes then the turkey mixture. Pour chicken broth over it.
  7. Sprinkle cheese on top if desired and bake for 15-20 minutes until hot and bubbly.
