Ingredients

Scale
  • 4 large russet potatoes (washed and dried)
  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • Additional salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and prepare an unlined baking sheet.
  2. Position each potato between two chopsticks or skewers to prevent slicing all the way through. Cut vertical slits about ⅛ inch apart.
  3. Place the sliced potatoes on the baking sheet and brush half of the melted butter over them, ensuring it seeps into the slits.
  4. Season generously with kosher salt and pepper.
  5. Bake for 30 minutes, then gently separate the layers with a knife and brush with remaining melted butter.
  6. Return to the oven for another 30-35 minutes until golden brown and crispy.
  7. Serve warm, adding extra salt and pepper if desired.
