  • 1/4 cup melted coconut oil
  • 3/4 cup maple syrup (divided)
  • 2 teaspoons vanilla extract (optional)
  • 2 eggs (room temperature)
  • 1/2 cup coconut sugar
  • 1 1/2 cups chopped pecans (raw and unsalted)

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix almond flour, melted coconut oil, 1/4 cup maple syrup, and vanilla extract until combined. Press this mixture into a lined baking pan to form the crust.
  3. Bake crust for about 10 minutes until lightly golden.
  4. In another bowl, whisk together coconut sugar, melted coconut oil, remaining maple syrup, vanilla extract, and eggs until well mixed. Fold in chopped pecans.
  5. Pour filling over the baked crust and return to the oven for an additional 20-25 minutes until set.
  6. Cool in the pan for at least 30 minutes before chilling in the fridge for an hour. Cut into squares and serve.
