  • 1.5 lb baby potatoes, halved
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream or whole milk
  • 2 tbsp all-purpose flour or cornstarch
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the ground beef until fully cooked; drain excess grease.
  2. Add butter to the same pot and sauté diced onion, carrots, and celery for about 5–7 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Add halved baby potatoes and beef broth; bring to a boil. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  4. Prepare a slurry by mixing flour with water in a small bowl; stir into the soup until thickened.
  5. Lower heat and mix in heavy cream (or whole milk) along with shredded cheddar cheese until melted and creamy.
  6. Season with salt and pepper to taste before serving hot.
