  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat oven to 375°F. Arrange tortillas on two baking sheets and bake for 3-5 minutes until golden and crispy.
  2. In a skillet over medium-high heat, brown the ground beef. Drain excess grease.
  3. Stir in taco seasoning and water; simmer for 10 minutes.
  4. Warm refried beans in the microwave for 1-2 minutes.
  5. Layer a tortilla with warm refried beans, beef mixture, another tortilla, enchilada sauce, cheese, and toppings.
  6. Repeat layering until all ingredients are used.
  7. Bake assembled pizzas for about 5 minutes until cheese is bubbly. Cool slightly before slicing.
