  • 1/4 cup unsalted sweet cream butter (softened)
  • 1/2 cup smooth peanut butter (for filling)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon pure vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, whisk together flour, baking soda, and salt.
  2. In another bowl, cream together softened butter and brown sugar until fluffy. Add in peanut butter, egg, and vanilla; mix until combined.
  3. Shape small balls of dough and roll in sugar before placing on a parchment-lined baking sheet.
  4. Bake for about 10 minutes or until edges are lightly golden. Cool on a wire rack.
  5. For the filling, blend softened butter and peanut butter until creamy; gradually add powdered sugar and milk until smooth.
