  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 medium avocados
  • 1 cup cherry tomatoes
  • 1 jalapeño pepper
  • Fresh corn from 1 ear
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced (or 1/4 teaspoon garlic powder)
  • Salt to taste
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. Marinate chicken by mixing olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (optional), and pepper in a bowl. Coat the chicken in the marinade and let it sit for at least 30 minutes.
  2. While marinating, prepare the avocado salsa by combining chopped avocados, cherry tomatoes (or Roma tomatoes), corn kernels, red onion, red bell pepper, diced jalapeño, cilantro, minced garlic (or garlic powder), lime juice, cumin, salt and pepper in a bowl. Stir gently until mixed.
  3. Heat a grill pan over medium-high heat and cook the marinated chicken for about 5 minutes on each side until it reaches an internal temperature of 165°F.
  4. Let the chicken rest for a few minutes before slicing and serving it topped with the avocado salsa.
