  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 ounces Brie cheese, rind removed and cut into small pieces
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan over medium heat, heat the olive oil. Add in your fresh cranberries and cook until they begin to soften and burst, about 5 minutes.
  3. Stir in honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper. Cook for another few minutes until the mixture thickens slightly.
  4. Cut a pocket in each chicken breast and stuff it with pieces of Brie cheese, then spoon in your cooled cranberry mixture.
  5. Secure each chicken breast with toothpicks.
  6. Sear the stuffed chicken breasts in a large oven-safe skillet over medium-high heat for about 2-3 minutes on each side until golden brown.
  7. Combine panko breadcrumbs with melted butter and sprinkle over the chicken. Return to the skillet and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  8. Let it rest for about 5 minutes before serving. Sprinkle chopped fresh parsley over each piece just before serving.
