  • 24 oz (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar

  • 3 large eggs
  • 1 cup (240ml) sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup (70g) brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ½ teaspoon cinnamon
  • ½ cup (115g) cold unsalted butter, cubed

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and granulated sugar; press into the bottom of a springform pan and pre-bake for 10 minutes.
  2. Beat softened cream cheese until smooth, then gradually add sugar and vanilla. Mix in eggs one by one, followed by sour cream.
  3. Pour the cheesecake filling over the crust.
  4. Cook diced apples with brown sugar, cinnamon, cornstarch mixed with water, and lemon juice until tender. Spread evenly over the cheesecake.
  5. Mix flour, brown sugar, cinnamon, and cubed butter for crumble topping; sprinkle over apples.
  6. Bake for 65 minutes until set but slightly jiggly in the center. Cool gradually in the oven before chilling in the refrigerator for at least 4 hours.
