  • 2 cups graham cracker crumbs

  • 24 oz cream cheese, softened
  • 3 large eggs
  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat the oven to 325°F (160°C). Prepare a springform pan by greasing it.
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl; press into the bottom of the pan.
  3. In another bowl, beat cream cheese until smooth; add sugar and vanilla. Mix in eggs one at a time followed by sour cream.
  4. Combine diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice.
  5. Pour half of the cheesecake mixture over the crust, add apple layer, then top with remaining cheesecake mixture.
  6. Bake for about 50-60 minutes until set but slightly wobbly in the center. Allow to cool completely before chilling overnight.
  7. For the crumble topping, mix flour, brown sugar, cinnamon, and cold butter until crumbly; sprinkle on top before serving.
