  • 1/2 cup plain bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves (minced)
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (adjust to taste)
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. In a large bowl, combine ground beef, bread crumbs, parmesan cheese, egg, minced onion, garlic, parsley, basil, crushed red pepper flakes, salt, and black pepper. Mix gently and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Add meatballs and cook until browned on all sides (about 5-7 minutes). Remove from pot.
  3. Add diced onion and carrots to the same pot; sauté for about 4 minutes. Stir in diced tomatoes and minced garlic; cook until fragrant.
  4. Return meatballs to the pot along with water, beef stock, tomato paste, salt, red pepper flakes, parsley, basil, and oregano. Bring to a gentle simmer for about 20 minutes.
  5. Add gnocchi to the soup and cook according to package instructions or until they float (about 3 minutes). Serve hot with grated parmesan.
