  • 4 tablespoons unsalted butter (divided)
  • 6 garlic cloves (2 smashed and 4 minced)
  • Fresh rosemary or thyme

  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • Optional: 1/4 teaspoon smoked paprika

Instructions

  1. Pat the steaks dry and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the steaks for about 3-4 minutes per side for medium-rare.
