  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • 6 cups chicken broth
  • ¾ cup orzo (uncooked)
  • 2 cups fresh spinach
  • Juice of 1 lemon (34 tbsp)
  • ½ cup heavy cream
  • ½ cup dry white grape juice
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Heat olive oil in a pot over medium-high heat. Season chicken with lemon pepper seasoning and sear each side for about 3-4 minutes until golden brown. Remove from pot and dice after resting.
  2. In the same pot, deglaze with white grape juice until reduced by half. Add butter, onions, carrots, celery, and garlic; cook for about five minutes.
  3. Stir in oregano, dill weed, hot sauce, Worcestershire sauce, and chicken broth. Bring to a boil.
  4. Return diced chicken to the pot and let simmer gently.
  5. Cook orzo separately according to package instructions; drain and set aside.
  6. Gradually stir in heavy cream into the soup.
  7. Add fresh spinach and lemon juice at the end before serving.
