  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix together flour, sugar, baking powder, melted butter, and salt until crumbly. Press this mixture into the bottom of an 8×8-inch baking pan lined with parchment paper and bake for 12-15 minutes until lightly golden.
  2. In another bowl, whisk together eggs, sugar, flour, lemon juice, and zest until smooth. Pour this mixture over the baked crust and sprinkle any reserved crumb mixture on top.
  3. Return the pan to the oven and bake for an additional 20-25 minutes or until the filling is set and slightly golden.
  4. Let the bars cool at room temperature before chilling in the refrigerator for at least one hour. Slice into squares and dust with powdered sugar before serving.
