  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, melted coconut oil, and salt.
  2. Press half of the oat mixture into a greased baking dish and bake for 10 minutes until golden.
  3. For the lemon filling, whisk together lemon juice, granulated sugar, cornstarch, baking powder, and water in a saucepan over medium heat until thickened.
  4. Pour the lemon filling over the baked crust and sprinkle with the remaining oat mixture.
  5. Bake for an additional 28-30 minutes until bubbly and golden on top.
