  • juice of 1 lemon
  • 1 teaspoon zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  3. In the same pan, sauté minced garlic until fragrant. Add chicken broth, lemon juice, and zest; bring to a boil while scraping any browned bits from the bottom.
  4. Lower the heat, stir in heavy cream, and let simmer for about five minutes until slightly thickened. Mix in grated Parmesan cheese until melted.
  5. Add spinach to the sauce and cook until wilted (about one minute). Return the chicken to the pan, spooning sauce over each piece.
  6. Garnish with additional Parmesan cheese and thinly sliced lemon before serving warm.
