  • 1 ball Easy pizza dough
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 150 grams fresh mozzarella cheese (or shredded firm mozzarella)
  • 2 tablespoons grated parmesan cheese
  • Freshly ground black pepper to taste

Instructions

  1. Prepare the dough according to your easy no-knead pizza recipe until step five.
  2. Drain and pat dry fresh mozzarella if using; cut into half-inch thick pieces.
  3. Shape the dough on parchment paper into a rectangle (about 9×13 inches) and transfer it to a baking sheet.
  4. In a jar, mix olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and black pepper to create an olive oil brine.
  5. Dimple the stretched dough with fingers and evenly distribute the brine over it.
  6. Add mozzarella cheese evenly across the surface.
  7. Bake in a preheated oven on a pizza stone or baking sheet for about 8–10 minutes until golden brown.
  8. Drizzle with fresh lemon juice and sprinkle with parmesan cheese and parsley before serving hot.
