  • 200 g granulated sugar
  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 3 tbsp lemon juice (as an alcohol substitute)
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix the granulated sugar with the lemon zest until fully combined.
  3. In a large bowl, sift together the almond flour and the lemon sugar mixture.
  4. In another bowl, whip the egg whites and salt until stiff peaks form.
  5. Gently fold in the almond extract and lemon juice, followed by the dry ingredients in thirds until fully combined.
  6. Scoop out dough portions using a cookie scoop and roll them in granulated sugar followed by powdered sugar.
  7. Place on the baking sheet, spaced apart, and slightly flatten each cookie ball.
  8. Bake for about 22-25 minutes or until cracks form but are not gooey inside.
  9. Transfer to a wire rack to cool completely.
