  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread on a lined baking sheet and roast until crispy.
