  • 2 cups cooked brown rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (omit for dairy-free)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (use coconut yogurt for dairy-free)
  • ½ cucumber, grated and excess water squeezed out
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste
  • 3 tablespoons olive oil for vinaigrette
  • 2 tablespoons fresh lemon juice for vinaigrette
  • 1 teaspoon honey (omit for strict keto or Whole30) for vinaigrette
  • 1 small clove garlic, minced for vinaigrette
  • ½ teaspoon dried oregano for vinaigrette

Instructions

  1. Marinate the steak in olive oil, minced garlic, fresh lemon juice, dried oregano, dried thyme, salt, and black pepper for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes per side for medium-rare, or cook longer if you prefer it well done. Let it rest for 5–10 minutes before slicing thinly against the grain.
  3. While your steak is resting, prepare the tzatziki by mixing plain Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper until smooth.
  4. Assemble your bowls with cooked brown rice or quinoa as the base, topped with sliced steak, cherry tomatoes, diced cucumber, red onion, olives, and crumbled feta if using. Drizzle with lemon vinaigrette and top with tzatziki.
