  • 1 Pound Ground Beef
  • 1 Can (14.75 Ounces) Cream-Style Corn
  • 1 Cup Frozen Corn
  • 1 Can (10 Ounces) Diced Tomatoes and Green Chilies (Rotel)
  • 1 Packet (1 Ounce) Taco Seasoning
  • 2 Cups Shredded Cheddar Cheese
  • 1 Box (8.5 Ounces) Jiffy Cornbread Mix
  • 2 Eggs
  • ⅓ Cup Whole Milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet over medium heat, cook the ground beef until browned and drain excess grease.
  3. Stir in cream-style corn, frozen corn, diced tomatoes with green chilies, and taco seasoning; cook for 5 minutes.
  4. Sprinkle one cup of cheddar cheese on top of the beef mixture.
  5. In a bowl, mix Jiffy cornbread mix with eggs and milk until just combined; pour over the beef mixture.
  6. Bake for 20-25 minutes until golden brown on top.
  7. Add remaining cheddar cheese and bake for an additional 5 minutes until bubbly.
