  • 1 baguette, sliced into 1/2 inch thick rounds
  • 1 tbsp olive oil, used for brushing
  • 250 g Baby Bella Mushrooms, thinly sliced
  • 2 garlic cloves, minced
  • 1/4 cup Marsala apple vinegar
  • 1 package Brie Cheese, sliced
  • 1 tbsp salt and pepper, to taste
  • 1 bunch fresh parsley, finely chopped for garnish
  • 1 dash crushed red pepper flakes, optional for added heat

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush both sides with olive oil. Toast for 3-5 minutes until crispy.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute. Add sliced mushrooms and cook until golden brown, around 5-7 minutes.
  3. Pour in Marsala apple vinegar and reduce by half (2-3 minutes). Season with salt, pepper, and optional red pepper flakes.
  4. On each toasted baguette slice, place a slice of brie cheese followed by a spoonful of the mushroom mixture. Return to the oven for an additional 3-5 minutes until the brie is melted.
  5. Garnish with fresh parsley and serve warm.
