  • 1 lb ground beef
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 8 cups chicken broth
  • 8 oz uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz sharp cheddar cheese, shredded
  • Croutons from sesame seed buns
  • 2 teaspoons dried oregano, divided
  • 2 teaspoons dried thyme, divided
  • 6 tablespoons butter
  • 4 tablespoons flour
  • 1 teaspoon white balsamic vinegar
  • Kosher salt
  • fresh cracked pepper
  • 2 tablespoons olive oil
  • sliced green onion, for garnish
  • shredded cheddar cheese, for garnish

Instructions

  1. Preheat oven to 400°F. Spread diced sesame seed buns on a baking sheet, drizzle with olive oil, and bake for about 10 minutes until crisp.
  2. In a large pot over medium heat, brown ground beef seasoned with oregano, thyme, salt, and pepper. Remove and set aside.
  3. In the same pot, melt butter and sauté onions, carrots, celery, salt, and pepper for 10 minutes.
  4. Add garlic and herbs; cook for another minute.
  5. Sprinkle flour over the veggies; stir for 1 minute.
  6. Deglaze with a splash of chicken broth; then add the rest of the broth and macaroni. Bring to a simmer.
  7. Cook pasta on low heat for about 5-7 minutes until al dente.
  8. Stir in heavy cream and cheddar cheese until melted; add white balsamic vinegar and return beef to the pot. Heat through.
  9. Serve topped with croutons and green onions.
