  • 1 whole chicken (35 lbs), giblets removed
  • 1 medium onion, peeled and halved
  • 2 tablespoons avocado oil (or olive oil)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Allow the chicken to rest at room temperature for 30–60 minutes before cooking.
  2. Preheat the oven to 425ºF (218ºC). Line a roasting pan with parchment paper.
  3. Pat the chicken dry and stuff the cavity with onion halves for added flavor.
  4. In a bowl, mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper into a paste.
  5. Brush the spice mixture all over the chicken and roast in the oven for about 70–90 minutes or until the internal temperature reaches at least 165ºF (74ºC).
  6. Let the chicken rest for five minutes before carving.
