  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare your blackberry jam by cooking blackberries with water, lemon juice, and sugar over medium heat for about 20-30 minutes until thickened. Smash berries as they cook; let cool.
  2. Thaw and roll out puff pastry sheets until pliable; cut each sheet into rectangles.
  3. Spread half of the goat cheese followed by half of the cooled blackberry jam on one rectangle. Cut into strips and twist.
