Ingredients

Scale
  • 1½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (Cool Whip), thawed
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 2 large eggs, lightly beaten
  • 1½ cups chopped pecans

Instructions

  1. Combine graham cracker crumbs with granulated sugar and melted butter in a bowl. Press the mixture into a greased 9×13-inch baking dish and chill for 10–15 minutes.
  2. In another bowl, beat softened cream cheese until smooth. Mix in powdered sugar and vanilla extract, then fold in whipped topping. Spread over the chilled crust.
  3. In a saucepan over medium heat, combine brown sugar, corn syrup, and butter until bubbly. Remove from heat and whisk in beaten eggs gradually to prevent scrambling. Stir in chopped pecans and let cool slightly.
  4. Pour the pecan filling over the cream cheese layer evenly. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  5. Slice into bars with a warm knife before serving.
