  • 1 turkey (12-14 pounds)
  • 1 cup kosher salt
  • 1 cup packed brown sugar
  • 2 quarts vegetable stock
  • 1 gallon of ice water, or more as needed
  • 2 stalks celery
  • 2 large carrots
  • 1 medium onion
  • 2 quarts chicken stock
  • Fresh herbs (rosemary, sage, thyme)
  • 3 tablespoons butter

Instructions

  1. Prepare the brine by combining kosher salt, brown sugar, black peppercorns, allspice berries, juniper berries, fresh herbs, garlic cloves, orange peel, apple chunks, and vegetable stock in a large pot. Stir until dissolved.
  2. Submerge the turkey in the brine solution in a large pot or cooler lined with a trash bag. Cover and refrigerate for at least 12 hours.
  3. Preheat your oven to 325°F (165°C). Remove the turkey from the brine and rinse under cold water; pat dry.
  4. Place chopped celery, carrots, onion, and parsley stems in a roasting pan as an aromatic base.
  5. Rub melted butter over the turkey skin and sprinkle with kosher salt inside and out.
  6. Roast in the preheated oven until a meat thermometer reads 165°F (74°C) in the thickest part of the thigh (approximately 2.5 hours).
  7. Allow to rest for at least 30 minutes before carving.
