  • 1 1/4 cups canned pumpkin puree

  • 1 teaspoon pure vanilla extract
  • 8 ounces cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a mixer, beat butter and sugars until light and fluffy. Add pumpkin puree, egg, and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Drop heaping tablespoons of dough onto prepared baking sheet, spacing them apart.
  6. Bake for 13 to 15 minutes until edges are set but centers remain soft. Cool on a wire rack.
  7. For frosting, beat cream cheese and butter until smooth; add vanilla extract and confectioners’ sugar until combined. Frost cooled cookies.
