  • 1 cup (8 ounces) mascarpone cheese
  • ¼ cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1 (15-ounce) can pumpkin puree
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • Pinch cloves
  • Pinch coarse kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C). Fit your spelt pie crust in a pie pan and prick the bottom with a fork. Bake for about 10 minutes until lightly golden.
