  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until crumbly.
  3. Press half of the crumble mixture into the bottom of the prepared dish to form a base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Spread the pumpkin filling evenly over the base layer.
  6. Sprinkle the remaining crumble mixture on top of the filling.
