  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together room-temperature butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract; add food coloring if desired.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually combine the dry mixture with the wet ingredients until just mixed.
  6. Fold in chocolate chips, mini vegan marshmallows, and broken graham cracker pieces.
  7. Drop tablespoon-sized dough onto the baking sheet; press extra mix-ins on top if desired.
  8. Bake for 12 to 14 minutes until edges are golden but centers remain soft.
  9. Let cool on the baking sheet before transferring to a wire rack.
