  • 12 cups ice cubes
  • ¼ cup packed light brown sugar
  • 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract
  • ½ tsp maple extract (optional)
  • Cold oat milk, to taste

Instructions

  1. In a small saucepan, whisk together brown sugar, pumpkin puree, cinnamon (or pumpkin pie spice), and warm water. Simmer on low heat for 2-3 minutes until slightly thickened, then remove from heat.
  2. Stir in vanilla extract; strain if desired for a smoother syrup. Store in an airtight container in the fridge.
  3. In a sealable jar, combine one double shot of espresso with 1-2 tablespoons of the syrup and ice cubes. Seal tightly and shake vigorously for 20-30 seconds until frothy.
