  • 140 grams brown sugar
  • 110 grams coconut oil or sunflower oil
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • ½ teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 2 tablespoons maple syrup (for glaze)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a mixing bowl, beat eggs and sugar until light and frothy.
  3. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix until combined.
  4. In another bowl, whisk together flour, baking powder, and pumpkin spice; gradually add to wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil and bake for another 20 minutes or until a toothpick comes out slightly moist.
  6. For the glaze, sift powdered sugar into a bowl; stir in milk and maple syrup until smooth.
  7. Once cooled, drizzle or spread the glaze over the cake.
