  • 1 pound sweet cherry tomatoes
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper
  • 8 ounces ricotta
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze

Instructions

  1. Preheat oven to 400ºF. In a baking dish, combine cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until tender and fragrant. Let cool.
  2. In a food processor, blend ricotta, remaining garlic clove, another tablespoon of olive oil, half of the basil leaves, salt, and pepper until smooth. Chill until ready to use.
  3. Slice the bread and brush both sides with the remaining olive oil mixed with minced garlic. Bake for 10-12 minutes until golden brown.
  4. Spread ricotta mixture on each toast, top with roasted tomatoes, sprinkle with remaining basil, and drizzle with balsamic glaze.
