  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

Instructions

  1. Preheat the oven to 375°F. Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 1 hour until golden and soft.
  2. In a large pot, cover quartered red potatoes with cold water, add salt, and bring to a boil. Simmer for 15 minutes until fork-tender.
  3. Drain potatoes and return them to the pot. Squeeze in roasted garlic.
  4. Warm half and half and butter together until melted. Pour into the potato mixture along with salt and pepper; mash until creamy but slightly lumpy.
  5. Serve warm, garnished with fresh herbs or additional butter as desired.
