  • 89 medium starchy potatoes (1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup (40g) grated parmesan cheese
  • 2 cups (220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roast garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and baking for about 30 minutes until soft.
  3. Grease a 9×13-inch baking dish with unsalted butter.
  4. Thinly slice the starchy potatoes using a mandoline slicer.
  5. Layer the sliced potatoes upright in the baking dish.
  6. In a saucepan, combine heavy cream, whole milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper over medium heat until blended.
  7. Mash roasted garlic cloves into a paste and stir into the cream mixture.
  8. Pour the creamy mixture evenly over the layered potatoes.
  9. Cover with foil and bake for 40 minutes.
  10. Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 30 minutes until golden brown.
  11. Let cool for a few minutes before serving; garnish with fresh chives.
